• 8 ounces of sirloin steaks
• 2 carrots
• 1 medium onion
• 1 cup of Brussels sprouts
• 1 cup of cooked rice
• 2 garlic cloves
• 2 celery sticks
• 3-4 basil leaves
• 1 tbsp of fresh parsley
• 1 tbsp of olive oil
• ½ cup of water
• Sea salt and pepper to taste

Cooking instructions
1. Preheat smoker to 225°F.
2. Grease a baking pan with olive oil.
3. Add the sirloin fillets and water into the baking pan.
4. Place the sirloin into the smoker for 3 hours.
5. Cut carrots into julienne.
6. Cut the onion and the Brussel sprouts into thin strips.
7. Thinly chop the garlic, celery, basil and parsley.
8. Add the veggies and spices to the sirloin and season with salt and pepper to taste.
9. Bake for 15 minutes at medium-heat.
10. Serve the sirloin with quinoa, veggies and top with basil leaves.

Personally, I love the taste of meat by itself! However, you might want to make them more special. Something that I recommend when it comes to meat is to add some pineapple slices over the meat. That will not only add flavor to the meat, but it will also make it softer.

The next part of the manual will consist of the details for assembly of the smoker. Once this is done, the next step is to Pre-Season the Smoker. This should be done before using the smoker for the first time.

Pre-Seasoning of Smoker:
Place the water pan in the smoker without water and set the temperature of the smoker to 135°C for 3 hours. After 2 hours 15 minutes, add around 1 cup of wood chips in the smoker. This might emit some smoke, which is normal. Shut off the smoker and cool down, the process of pre-seasoning is complete.

Using the Smoker:
It is important to ensure that you do not use wood chunks and stick to only wood chips when using the smoker. Sometimes on opening the smoker door, it can cause the chips to flare up, the door should be closed and reopened when the chips burn down. Water should never be splashed.

You can add wood chips during the smoking process, by checking periodically if the chips has burnt down. When you unload, the burnt chips will be collected on the wood chip tray.

Digital Smoker can be used to set the temperature on the Smoker. The LED screen will display the correct settings. Sometimes during bright sunlight the LED might not be readable. You can set hours and minutes for the smoking process. The heating will turn off once the time has expired.

The remote control works on AAA batteries. You can check the range of the remote control frequency by moving away from the smoker unit while using the remote. The standard range is of around 100 feet. You should not leave the remote in direct sunlight for extended periods as it can damage the remote.

Build Your Own Smoker

Men like to barbeque and show off their skills and techniques in this form of cooking. What could be more ideal than getting to barbeque in a smoker built by you? One more reason to boast and show off the DIY skills as well in build your own smoker. Building your own smoker is a fun project and definitely cheaper than buying one. You can get most of the material from unwanted stuff and the remaining from Home Depot stores.


One of the best ways to build your own smoker is using a large barrel. It would be wise to choose a food grade barrel. The material of the inside coating of the barrel should not be toxic. If you can’t tell what it’s coated in, you can get sanding done on the inside of the barrel to remove any debris etc. Avoid lead and cadmium plated barrels as they might cause the metal to mix with food or give out toxic fumes at high temperatures. You can also create a burn inside the barrel, so that it burns away unwanted material, after which it can be cleaned and used.

You will need the following supplies for DIY i.e. build your own smoker:

Ball Valve
Bushings, Washers
Nuts & Bolts
Steel Grate
Handles, preferably heat resistant

Depending on the size of the barrel, you can determine the length of the grate you will need to fix in the barrel. Using the barrel vertically might give less space for grilling, if you use the barrel horizontally there will be more space to fit the grate.

You can cut the barrel, using a grinder, in such a manner that it acts as a lid to the smoker as well. If you want to keep the barbeque outdoors, you can create a stand from rods & cement. Using wheels from old scrap wheel barrow or lawn mower can make the smoker quite handy and portable. You could lift off the barrel whenever required and store it away. Fix the barrel lid with brackets so that it does not fall inside the barrel. A lower rack can also be added to the barrel, as the coal can be placed here.

Finally you can add a nice heat resistant handle on the lid, which you can easily get from a hardware store. You should add air vents on both sides of the barrel and a temperature measuring device. Spray painting the barrel with some heat resistant paint will give it a very professional look, as well as prevents any chances of rust formation.

The best option is to use a 55 gallon drum, so that you get adequate space to set up the grates. You can look up on the internet for options, when building a smoker. You might need to get some calculations done for the tank chamber, chimney size, air inlet openings etc. based on the size of your smoker.

You can build your own smoker from other raw materials like flower pots, Old refrigerators, Coolers, Filing cabinets, wood stove and even trash cans.

How to Smoke Turkey ?

People do not tend to cook or smoke turkey very often and for this reason they stick to either putting it in the oven to roast or deep fry it. However, the flavor and taste of a smoked turkey can not be matched by any other method of cooking. In this article we will find the ways on how to smoke turkey perfectly with some tips and tricks.

The first step in smoking a turkey begins with getting the right turkey. It should be fresh and preferably free from any injections and solutions added to it. The added brine can alter the cooking time and temperature requirements. If you are going to use a frozen turkey, it should be properly defrosted. If the turkey is up to 20 pounds in size, it will take very long time smoke and also increase the risk of contamination. A turkey of 12-16 pounds is ideal.

You can smoke the turkey indoors or outdoors, but you should ensure that you have a good meat thermometer before you begin. Over smoking can dry out a turkey and hence a good watch should be kept on the thermometer.

How to Smoke Turkey:

You should keep the turkey in brine or a flavored liquid to marinate for at least 24 hours in a refrigerator. Once this is done, remove it and wash it thoroughly. The marination in brine helps the turkey to remain moist during the smoking process.

Smoked Chicken Breast with Zucchini and Olives

Prep-time: 10 minutes Cooking time: 20 minutes Total Time: 30 minutes Serves: 4
• 1 pound of chicken breast
• 3 zucchinis
• 2 broccoli
• 1 onion
• 4 tomatoes
• Half cup of black olives
• 1 cup of cooked white rice
• 4 garlic cloves
• One fourth cup of fresh cilantro
• 1 cup of water
• ¼ cup of lemon juice
• 1 tbsp of red wine vinegar
• ¼ cup of olive oil
• Salt and pepper to taste

1. Preheat smoker to 225°F.

• 1 large avocado
• 1 lettuce
• One cup of cherry tomatoes


1. Preheat smoker to 225°F.
2. Cut the chicken breast into thin strips.
3. Chop the garlic.
4. Julienne the bell peppers.
5. Mix the chicken breast with the oregano, cilantro, chili powder, cumin, garlic, capsicums, lemon juice and avocado in a bowl and let them marinate for 30 minutes in the refrigerator.

Smoked Turkey Recipe

A few weeks ago I was chatting with a good friend about how to cook a smoked turkey and he told me: “…I hate the fact that thanksgiving is already off… It’s just that I can’t stand the idea that I will have to wait another year to eat your amazing smoked turkey recipe…”

Right after he said that, I started thinking that what he said was actually true. I mean, why do I have to wait until the next thanksgiving to cook an amazing and killer smoked turkey recipe? So, that’s when it hit me and started planning a spontaneous social gathering so that I could cook the famous smoked turkey. But you may wonder, what makes this turkey so special? Well, the answer is simple: the flavor. You can totally tell the difference between a traditional turkey cooked on the kitchen and an amazing smoked turkey cooked alfresco. So today, I’m going to share with you this amazing recipe so that you can share it with your family and friends the next thanksgiving or In any other occasion:

Ingredients Needed In Smoked Turkey Recipe:

• One entire unfrozen turkey, about 10 to 12 pounds with the neck and giblets removed.
• A reasonable amount of water in a tub.
• One cup of kosher salt.
• Half cup of honey.
• Some ice cubes.
• The rind of a lemon.
• One bunch of fresh thyme and sage.
• A small onion.
• Four garlic cloves.
• Three tablespoons of melted ghee (clarified butter)
• A tablespoon of black pepper.


1. Pour a quart of the water on a big pot and add the salt and the honey.
2. Heat up the pot to the highest heat and stir everything until the salt and the honey are dissolved and then switch off.
3. Pour in some ice in the heated water till  things are dissolved, until the water turns cold.
4. In the pot, add the turkey and fill it with water until it is submerged.
5. Cover the pot and put it on the fridge for about 12 hours.
6. Remove the turkey from the water and dry it inside and out with kitchen towels.
7. Place it on a baking sheet for about half an hour for it to dry out.
8. Meanwhile, prepare the aromas stuff. The lemon rind, the onion, the garlic and the sage and thyme.
9. When the turkey is dried fill in the aromatics but make sure to have extra space in the turkey.
10. Brush the turkey with melted ghee, inside and out.
11. Start heating your electric smoker to 225°F and make sure that the temperature is stable.
12. Put the turkey into the smoker.
13. As it smokes, take the neck and gizzard and stir the pepper and simmer it in a quart of water on low.
14. After an hour, turn the turkey and rotate 180 degrees.
15. Tilt the turkey on its backside and drain out any liquid on it into the sink.
16. Cover the turkey again and smoke for other 45 minutes.
17. Open the smoker and drain any collected water. If the turkey is ready, pull it off.
18. Leave the turkey rest for about 20 minutes before serving.

• 4 pounds of beef brisket
• 1 cup of beef stock
• 1 tbsp of chilli powder
• 1 tbsp of garlic powder
• 1 tbsp onion powder
• 1 tbsp ground black pepper
• 1 tbsp of brown sugar
• 1 tbsp of Dijon mustard
• 1 tbsp of fresh thyme
• 1 tbsp of fresh rosemary
• ½ pineapple
• Salt to taste

1. Preheat the electric smoker to 225°F.
2. Peal the pineapple and cut it into small squares.
3. Thinly chop the thyme and rosemary leaves.
4. In a food processor, blend the pineapple with the beef stock.
5. In a large bowl mix the chili powder, garlic powder, onion powder, black pepper, brown sugar, Dijon mustard, rosemary and thyme. Taste it and season with salt if needed.
6. Place the beef brisket on a roasting pan and season the entire brisket with the previous mixture.
7. Pour the beef stock mixture over the brisket and place it into the smoker for 3 hours.
8. Remove from the smoker and pour juice from the pan over the brisket in order to have a better taste.
9. Slice the brisket into thin slices.

Originally this recipe was without pineapple; however I thought that it would be a great idea to smoke the brisket with pineapple. Using pineapples when you cook beef it is a very good idea. For one thing, pineapple makes the beef to be soft and tender and for another thing, it is a great combination.

What I like about this smoked Brisket recipe is the fact that you can complement it with almost anything you want. For example, once the brisket comes out from the smoker you can top with sliced onions in order to look better. Also, you can accompany your brisket with a great variety of side dishes. A great idea will be to roast some white potatoes or some sweet potatoes. Or you can pick another starch. Some people like to accompany beef with white rice. You can also accompany your brisket with lentils, quinoa or carrots. Since this recipe has already a fruit, the best thing will be to accompany the brisket with a salad that does not contain fruits. You do not need to make a complex salad since the main dish is the smoked brisket. It would be good enough to sauté some green peas, zucchinis and eggplants and to mix them in a bowl.
