A few weeks ago I was chatting with a good friend about how to cook a smoked turkey and he told me: “…I hate the fact that thanksgiving is already off… It’s just that I can’t stand the idea that I will have to wait another year to eat your amazing smoked turkey recipe…”
Right after he said that, I started thinking that what he said was actually true. I mean, why do I have to wait until the next thanksgiving to cook an amazing and killer smoked turkey recipe? So, that’s when it hit me and started planning a spontaneous social gathering so that I could cook the famous smoked turkey. But you may wonder, what makes this turkey so special? Well, the answer is simple: the flavor. You can totally tell the difference between a traditional turkey cooked on the kitchen and an amazing smoked turkey cooked alfresco. So today, I’m going to share with you this amazing recipe so that you can share it with your family and friends the next thanksgiving or In any other occasion:
Ingredients Needed In Smoked Turkey Recipe:
• One entire unfrozen turkey, about 10 to 12 pounds with the neck and giblets removed.
• A reasonable amount of water in a tub.
• One cup of kosher salt.
• Half cup of honey.
• Some ice cubes.
• The rind of a lemon.
• One bunch of fresh thyme and sage.
• A small onion.
• Four garlic cloves.
• Three tablespoons of melted ghee (clarified butter)
• A tablespoon of black pepper.
PROCESS
1. Pour a quart of the water on a big pot and add the salt and the honey.
2. Heat up the pot to the highest heat and stir everything until the salt and the honey are dissolved and then switch off.
3. Pour in some ice in the heated water till things are dissolved, until the water turns cold.
4. In the pot, add the turkey and fill it with water until it is submerged.
5. Cover the pot and put it on the fridge for about 12 hours.
6. Remove the turkey from the water and dry it inside and out with kitchen towels.
7. Place it on a baking sheet for about half an hour for it to dry out.
8. Meanwhile, prepare the aromas stuff. The lemon rind, the onion, the garlic and the sage and thyme.
9. When the turkey is dried fill in the aromatics but make sure to have extra space in the turkey.
10. Brush the turkey with melted ghee, inside and out.
11. Start heating your electric smoker to 225°F and make sure that the temperature is stable.
12. Put the turkey into the smoker.
13. As it smokes, take the neck and gizzard and stir the pepper and simmer it in a quart of water on low.
14. After an hour, turn the turkey and rotate 180 degrees.
15. Tilt the turkey on its backside and drain out any liquid on it into the sink.
16. Cover the turkey again and smoke for other 45 minutes.
17. Open the smoker and drain any collected water. If the turkey is ready, pull it off.
18. Leave the turkey rest for about 20 minutes before serving.
