  1. Make a spice rub with all the dry spices.
  2. Cover the brisket with a generous amount of yellow mustard, cover this with the spice rub.
  3. Smoke the brisket for 4 hours at 200 F, and use Mesquite bisquettes or chips if possible.
  4. Further cook the brisket for 6 hours or till done.


  1. Smoked Turkey
 Ingredients Quantity
Turkey (10-12 lb) 1
Brandy 1 cup
Honey 1 cup
Brown sugar 1 cup
Cloves, crushed 1 teaspoon
Poultry seasoning 1 tablespoon



  1. Use the brandy to inject the turkey.
  2. Coat the turkey with the poultry seasoning on inside and out.
  3. Use apple or hickory wood to smoke the turkey for 10- – 12 hours.
  4. The internal meat temperature at breast should reach 155 and at thighs should be 165 F.
  5. Make sauce using the remaining brandy, honey, brown sugar and cloves.
  6. Rest the turkey for 30 minutes before serving with the sauce.


  1. Smoked Shrimps in Shell
 Ingredients Quantity
Large Shrimps 2 pounds
Melted Butter ½ cup
Garlic crushed 4 cloves
Salt 2 tablespoons
Parsley 3 tablespoons



  1. Wash and clean the shrimps, removing the legs and leaving the shells on.
  2. Mix the butter, garlic, salt and parsley.
  3. Coat the shrimps completely with this mixture.
  4. Keep this in the refrigerator for one hour.
  5. Smoke the shrimps till the shells turn bright pink.
  6. If the shrimps are small, they can be placed on grill sheets to prevent them from falling out.

  1. To prepare the brine, dissolve the pickling salt in the apple juice.
  2. Once completely dissolved, add the maple syrup and brown sugar.
  3. Place the salmon pieces in a zip-lock bag with the skin-side up.
  4. Add the brine to the zip-lock bag and refrigerate for 8 hours.
  5. Remove from the brine solution and pat dry with a paper towel.
  6. Place in the Bradley Smoker with the skin side down.
  7. Smoke at 150°F for 2-3 hours using Hickory for the smoke.


  1. Smoked Turkey in Apple
 Ingredients Quantity
Turkey 1 – 14 lb
Apple Juice 3 quarts
Oranges 4 nos.
Brown Sugar 1 ½ lb
Kosher salt 1 ½ cup
Ginger, thinly sliced 6 oz
Cloves 15
Bay leaves 6
Garlic, crushed 1 clove
Vegetable Oil For brushing



  1. Dissolve salt and brown sugar in apple juice in a large saucepan, while bringing it to a boil.
  2. Take 3 quarts water in a large plastic bucket, add oranges, ginger, cloves, bay leaves and garlic to it.
  3. Add the cooled down apple juice to the bucket and mix well.
  4. Remove the excess fat from the turkey cavity, keep aside the neck and giblets.
  5. Submerge it in the bucket for 24 hours ensuring it is completely immersed.
  6. Cook for 3 hours at a temperature of 230°F in the Bradley Smoker.
  7. The internal temperature of thigh should be 180 and at breast should be 165.
  8. Use apple wood for smoking for initial 90 minutes.


  1. Smoked Pork Tenderloin
 Ingredients Quantity
Pork tenderloin 1
Garlic, minced 4 cloves
Dijon mustard 2 tablespoon
Maple syrup ½ cup
Salt 1 tsp
Pepper ½ tsp
Vegetable oil 1 tablespoon


  1. Mix all the ingredients except Pork tenderloin to prepare the marinade.
  2. Place the tenderloin in a zip lock along with the marinade and refrigerate overnight.
  3. Remove from the marinade and smoke at 225°F for around 3 hours.
  4. The internal temperature should reach 160°F.
  5. Use Maple wood or chips for smoking.

• 6 whole chicken breast

1. Preheat the smoker to 225°F. If you want, put a bowl with pineapple juice or apple juice into the smoker.
2. In a bowl, mix the onion powder, garlic powder, cayenne pepper, white pepper, black pepper, thyme and oregano.
3. Season the chicken breasts with the spices mixture. If you want, add the juice from one lime to them. Place them in the fridge for 30 minutes or, to have optimal results, overnight.
4. Grease a baking tray with olive oil and put the chicken breast onto it.

• 4 chicken thighs
• 2 tablespoons of powder paprika
• Three garlic cloves
• One tsp of oregano
• 2 large carrots
• One whole lettuce head
• Half cup of olive oil, extra virgin
• 2 tbsps of white vinegar
• Sea salt and pepper to taste

1. Preheat the electric smoker to 225°F.
2. Separately, chop the garlic and lettuce. Place them on different bowls.
3. In a small bowl, combine paprika, chopped garlic, oregano, salt and pepper to taste.
4. Rub each chicken thigh evenly with previous mixture. Set aside.
5. Cut the carrots into ½ inch sticks.
6. Grease a baking tray with olive oil.
7. Place chicken thighs and carrot sticks onto the prepared tray.
8. Smoke for 3 hours. Remove the carrot sticks after they spend 1 hour in the smoker.
9. Serve golden chicken thighs on top of chopped lettuce. Accompany with carrots.
