Directions:

  1. The beef fillets should be seasoned with garlic, salt and pepper.
  2. Sear the beef fillets in olive oil to seal the juices inside prior to smoking
  3. Place the fillets on aluminium foil with the top uncovered and smoke in preheated smoker at 225°F
  4. You can sprinkle olive oil on the fillet, if required

Coarse Salt 2 tablespoons
Brown sugar 2 tablespoons

Granulated Garlic ½ tsp
Wood chips For smoking

Directions:

  1. Mix the salt, brown sugar, pepper powder and garlic along with water
  2. Place the Tuna steaks in a zip lock bag along with the marinade
  3. Spray the cooking rack with oil and place the drained tuna steaks on the rack
  4. Smoke for 3-4 hours, till the fish can be flaked easily with a fork
