Smoking is basically the process of cooking something by exposing it to smoke traditionally from burning wood such as oak, hickory or apple; this is what creates the unique flavor. The smoking method is particularly great for creating really flavorful, tender and juicy meat dishes as cooking it over a relatively low heat and over a long period of time allows the meat to soak up the flavor and moisture. Below are just three of my favorite dishes to cook with the electric smoker because the results are always incredible and leave people wanting more.

Barbecue Pulled Pork: Without a doubt my favorite thing to cook using the smoker. After soaking a pork joint in brine overnight, I massage spice mix into the meat and place into the smoker for 10 hours. During the last hour of the smoking process, I make sure to baste the joint with a mix of barbecue sauce and apple cider vinegar to soak into the meat and create the desired soft texture. The beauty of slow roasting of the pork joint means that the meat will literally just fall off the bone, so once it is cooked, you can just use a fork to pull the meat off the bone and then to complete, mix with more barbecue sauce. One of my favorite combinations is to put the barbecued pulled pork in a bread roll or tortilla wrap with coleslaw and salad or in a jacket potato with a side salad. This is always a winner and very popular with my friends and family. The beauty is that with the electrical smoker you can use this same method for any meat, so if you are not a fan of pork, you can use chicken, lamb, beef or anything else you prefer and it will turn out equally tasty. • Spicy Teriyaki Chicken: Another one of my absolute favorites is my teriyaki chicken drumsticks. Simply marinade the chicken in teriyaki sauce over night and then place in the smoker for 2 and a half hours, remembering to baste them every half an hour with barbecue sauce. This always goes down really well at parties.

• Smoked roasted vegetables: While I am using the electrical smoker, I like to take full advantage and use it to create a side dish for the meal or a vegetarian alternative. One of my favorite things to do is chop up a selection of root vegetables in a pan for example parsnip, beetroot, potato, carrot and butternut squash cover them in oil, honey and herbs such as rosemary and put them in the smoker for about 30 minutes. Once cooked, drizzle again in honey and sesame seeds to add a little texture, it is simple but incredibly tasty.
